Zucchini Cake - Recipe # 5

Zucchini Cake
Beat 3 eggs
Add 2 cups sugar
1 cup oil
2 cups ground or blended zucchini
(Pack squash tightly in cup & drain off excess liquid)
Sift & add 2 cups flour
¼ teaspoon baking powder
2 teaspoon soda
2 teaspoons cinnamon
1 teaspoon salt
3 teaspoons vanilla
1 cup nuts
Pour into greased cake pan (Sheet cake) or loaf pans.
Bake @ 350 degrees for about 1 hour.
Icing
1 cup sugar
½ cup canned milk
¾ stick of margarine or butter
1 teaspoon vanilla
Boil for 2 minutes & pour over warm cake.
